Melania's Gourmet Lemon Poppy Seed Cookie Recipe

Ingredients:

1/2 Cup Lemon Juice (fresh)

1 Lemon Zested

16oz Softened Butter
-
4 Cups All Purpose Flour

2 TSP Baking Powder
-
1 TSP Salt
-
2 Cups Sugar
-
2 Eggs
-
4 TSP Vanilla Extract
-
2 TBSP Poppy Seeds
Instructions:

Simmer lemon juice in a small pot until reduced by half. Take off heat, add 1/2 of butter, stir to melt

Whisk dry ingredients together in a bowl

Cream the rest of the butter with sugar in mixer

Add eggs (one at a time)

Add lemon juice and butter mixture and beat until pale (about 3 mins)

Add flour
-
Add vanilla and lemon zest
-
Refrigerate for 1 hour

Scoop onto pastry paper lined baking sheets, shape into balls, roll them in a mix of sugar and lemon zest and flatten slightly

Sprinkle Poppy Seeds on top

Bake at 325 until slightly golden around the edges (about 10 - 12 mins)
